Homemade gnocchi with tomato sauce

Hi Everyone! This is Vinya, I’m posting this recipe for my mom… My little sister and I made this meal a week ago. We used the gnocchi recipe from Donna of http://cookinginlucca.blogspot.com It was delicious! I converted the recipe to kgs…makes enough for 4 very hungry people but I suggest making double so that you can store it for another meal :)  Having made gnocchi only once before I was excited by how fast shaping the gnocchi becomes after little practice.

Ingredients:

2kg potatoes

2 cups of flour

salt to taste



Boil the potatoes in their jackets until soft. Drain cool and peel. Use a potato ricer to rice them (We used a fork and fluffed the potatoes, never used a ricer so wouldnt know the difference) .Add flour, salt and work with your hands into a dough. Break off chunk, roll into a sausage like cylinder, cut into 1” pieces. Flour lightly. use your finger to press them against the back of a fork and roll it off the fork to make the indentations

Toss into boiling water, when they come to the top they are done.

The first recipe i would like to share on my new food blog is from my daughter Vinya(15), who made the best penne ever for my birthday dinner and left the whole family in awe… 

Ingredients:

1 large yellow onion

7 small to medium sized cloves of garlic

1 organic green bell pepper

1 red chilli

1 green chilli

1 can (400g) pulpa tomato

4 tablespoons tomato paste

Palm sugar

500g penne

200g parmesan

1 sprig rosemary, pluck of the stick

Chop onion and garlic finely, then roast them in a generous splash of oil. Slice both chilli’s and add it to the pan. Then chop the bell pepper into medium pieces and add as well. Add canned tomatoes and tomato paste together with some water. Cook for 15 mins adding water when the sauce gets too dry. Taste and add salt, some palm sugar and rosemary. Let it simmer till the penne is al dente, drain pasta and mix sauce with the pasta. Cut parmesan into small pieces, stir together with sauce and pasta. Now all you have to do is serve and enjoy! :)
